Lancashire hotpot

I love making this in the slow cooker on a day that we have something on after school or if we have a busy day outside in the cold on farm.

 

it's great satisfaction knowing that there's something warm and comforting waiting just to be dished up as soon as we get in through the door on a cold and dark night.

 

it can even be prepared the day before just ready to switch on and do it's thing.

 

the lamb chops just melt in the mouth and combined with tatties, vegetables and the gravy it makes a super tasty and nutritious supper.

Ingredients:

6 to 8 lamb chops or 500g diced scotch lamb

1 onion (sliced)

4 carrots (chunky)

500g of lamb or chicken gravy

2 bay leaves

2 tsp Worcestershire sauce

8 to 10 tatties peeled and sliced

 

 

Optional additions:

​

Some chunky bits of neep or other root vegetables to get some more veg packed into your day.

a garlic clove (finely chopped)

splash or red wine

Homemade Lancashire hotpot - a stew  con

1: Put the lamb, onion, carrots all into the slow cooker or casserole dish.

 

2:Add the gravy, bay leaves and Worcestershire sauce.

​

3:cover with the sliced tatties

​

4: turn on the slow cooker on low and let it do it's thing - easy peasy! or cook in the oven at 160C for an hour and a half or until potatoes are cooked.
