
Vietnamese Caramelised Pork
I found this recipe one night I was wanting something quick and tasty for supper and have adapted it to suit by adding peppers in.
this is something that is warm and comforting and perfect mid week meal in February.
Ingredients:
1 small onion(diced)
2 tsp fresh ginger (grated)
2 garlic cloves(chopped finely)
1 birds eye red chilli (sliced)
1 pack of lfk pork mince
5 tbsp brown sugar
2 tbsp fish sauce
1 red pepper or a couple of handsful of frozen peppers

1: Heat some oil in a pan
2:Add the onion, garlic, ginger and chilli and cook over a medium heat for 2 minutes
3:add the pork mince and break up the mince using a wooden spoon cook until all the mince has browned
4: Add the peppers (Use fresh pepper or frozen I've been buying frozen peppers lately for handiness when wanting to make something quick and get some extra veg packed in!)
5:Add the sugar and fish sauce. Stir it all in then leave it without stiring until all the juices cook out and the pork starts to caramelise (leave it for a couple of minutes) then stir it and leave for another minute to caramelise further.
6: serve with rice or noodles.
